Thai Curried Long Squash

Ingredients
- 1-2 tbsp coconut oil
- 1-2 long squash
- 1-2 bell peppers yellow and red
- 1/2 onion vertically sliced
- 1 tsp garlic minced
- 2 tsp ginger minced or grated fine
- 1 cup coconut milk
- 1-2 tbsp thai green curry paste spicy
- 1 lime zest and juice
- 2 tsp brown sugar
- 1 tsp garlic minced
- 1 tbsp ginger minced
Fresh cilantro and/or basil for garnish
Instructions
- To a wok or large saute pan over high heat, add coconut or vegetable oil. When oil is hot, add opo squash. Stir-fry 1 to 2 minutes, then add peppers, onion, garlic, and ginger. Stir-fry another 1 to 2 minutes.
- Mix together second part of ingredients to create coconut curry sauce or marinade.
- Add to wok coconut curry sauce, stir, and cover. Simmer just until vegetables are tender.
- Garnish with chopped cilantro and/or basil if desired.
