Roasted Potatoes with Broccoli

Ingredients
- 4 potatoes cut in 1-inch chunks
- 1 broccoli
- 2 cloves garlic, minced
- 1 onion, thinly sliced
- 2 cups shredded cheddar
- 1 tbsp olive oil
- 1 tsp dried Rosemary
- 1/2 tsp salt and pepper
Basil for garnish
Instructions
- Heat oven to 350°F.
- Add all ingredients to the mixing bowl except the cheese. Use a wooden spoon to gently mix all the ingredients together
- Place in the oven for 25 minutes or until the broccoli starts to brown. Also, pierce a potato with a knife tip. It should pierce easily
- Add cheese for 5 minutes more until the cheese is melted and brown. Remove from the oven
- Enjoy!
